Mahi Mahi with lima Beans
3 mahi mahi fillets
1 package frozen lima beans
1/3 tsp crashed red peppers
½ tsp Salt
½ tsp black pepper
Snipped oregano leaves
1 Lemon juice
Chopped parsley
A few fresh mint leaves
3 tbsp olive oil for beans
2-3 tbsp oil for fish
Preparation:
- Combine chopped parsley, lemon juice, 2 tbsp olive oil, salt, pepper, lima beans in a medium bowl. Place lima bean mixture equally to prepared aluminum foil pieces, according to numbers of fish fillets you have.
- Season fish fillets with oil, salt, pepper, oregano leaves, lemon juice, crashed red pepper flakes, and put a few fresh mint leaves on top of each mahi mahi fillet.
- Place fish fillets over lima beans and fold aluminum foil loose. Put each individual wrapped foil onto a cooking dish. Bake for about 20- 25 minutes to 350 F pre-heated oven.
